My cake didn't turn out as well as the original poster of the recipe, but, I tried~ The white chocolate icing wasn't as thick; I should have made it the night before icing the cake...will note that for next time, but strangely, the dark chocolate icing turned out pretty well...but I used two different methods for the icing, should have stuck with one D: Oh well~
Sadly, I didn't buy enough m&m's for a double rainbow effect, but because of the failed white chocolate ganache, the m&ms had a hard time sticking, so it worked out in the end anyway~
Rainbow cake & Malteser cake (from raspberri cupcakes and poires au chocolat)
195g self-raising flour
195g butter, room temperature
150g caster sugar
105g ovaltine or Horlicks
1 tsp baking powder
3 eggs
60mL milk
60mL boiling water
180g white chocolate
180g dark chocolate
300mL pouring cream
2 packets of m&ms
1 packet of maltesers
1 bucket of fairy floss
Optional: sprinkles on the side to fill in the empty space.
Preheat oven 180 degrees, and grease cake tin. Beat butter and sugar together until light and fluffy. Add eggs one at a time, beating well. Sift flour, baking powder and ovaltine together and fold into mixture until almost combined. Add milk, fold again. Add water, fold again. Quickly place mixture into baking tin, and bake for ~30-35 minutes or until skewer comes out clean. Leave to cool.
For the rainbow cake shape, I cut the cake in half first and used a measuring cup to cut a semi circle from it - much like, making cookies from cookie cutters, but if you have a round cutter, use it haha.
For the ganache, half the cream; break up the chocolates. Heat chocolate and cream together in microwave for about 60seconds; mix until combined. Wait to cool. In the meantime, separate the m&ms and cut up the maltesers into perfect halves, with a sharp knife. When cake has cooled, using a knife, spread ganache over both cakes and decorate!
End result after much rushed work.
